  • Heat barbecue for indirect grilling: Light one side of barbecue, leaving other side unlit. Close lid; heat barbecue to 350ºF. Cut lemons in half. Squeeze juice into small bowl; reserve lemon halves for later use. Stir barbecue sauce and Italian seasoning into lemon juice.
  • Trim and discard excess fat from chickens. Place 2 lemon halves and 2 garlic cloves inside each chicken cavity.
  • Place chickens, breast-sides up, on grate over unlit area; cover. Grill 1-1/2 to 2 hours or until done (170°F) monitoring for consistent grill temperature, turning and brushing occasionally with barbecue sauce mixture for the last 20 min. Discard lemons and garlic from chicken cavities before serving chicken.

Cooking Know-How

The indirect grilling method is a great way to keep large pieces of meat moist and tender on the barbecue.


Prepare as directed, using 1 large chicken (2 kg) and increasing the grill time to 1 hour 45 min. to 2 hours or until chicken is done (170ºF).
