  • Heat oven to 450°F.
  • Mix 1 Tbsp. vinaigrette, lemon zest, juice, mustard, thyme and garlic until blended. Combine vegetables in large bowl. Add vinaigrette mixture; mix lightly. Spread onto baking sheet sprayed with cooking spray.
  • Bake 30 min. or until lightly browned, stirring occasionally. Remove from oven; reduce oven temperature to 350°F.
  • Combine squash mixture, remaining vinaigrette and all remaining ingredients in ovenproof Dutch oven.
  • Bake 50 min. or until vegetables are tender, chicken is done and mixture has thickened, stirring occasionally.

Serving Suggestion

Serve with baguette slices, and a mixed green salad tossed with your favourite Renée's Vinaigrette.
