Sweet or… Spicy?
So, it’s Monday… And chances are, ALL of you have seen our show this weekend… OK, maybe not ALL of you… But really, there’s no excuse since you can watch it online in our “Shows” section… ;) So go ahead, we’ll wait.
Now let’s move on. As you’ve now ALL seen, we had the opportunity to meet Smita Chandra, a food consultant who specializes in Indian cuisine.
For those of you wondering what is always in Smita’s tin:
- whole cumin seeds
- ground cumin
- ground coriander
- cayenne pepper
- dried fenugreek leaves (which Smita says is what gives the distinctive “Indian” taste to food)
- and a blend of garam masala.
And for those of you who would like Smita’s very own garam masala recipe, here is it:
- 1 ½ tsp of cardamom pods
- 4 1-inch sticks of cinnamon
- 1 tsp black pepper
- 1 tsp cumin seeds
- 1 tbsp whole cloves
- ½ teaspoon fennel seeds
- 1 tsp dried fenugreek leaves
- and a pinch of saffron.
Smita suggests adding as much or as little as you’d like… If you’re feeling bold, even a spoonful of each is fine!
And here’s another interesting bit of info… When we asked Smita what the traditional Indian beverage was, she answered… water! We were expecting some kind of mysterious tea, or a certain type of wine… But no, Indians like their food with water, thank you very much.
