Tomatoes: it’s that time of year again!
Each year, around the middle of August, the number of tomatoes in the garden, and on the market, explodes! Bushels of them are available right now, at very low prices, and it’s now that tomatoes are at their best: nice and ripe and juicy. But what is to be done with so many tomatoes? Here are a few ideas…
Creamy tomato soup
Why not make a large batch of your favourite creamy tomato soup and then freeze it for fall. If your recipe calls for real cream however, only add it just before you are going to eat the soup.
Chili sauces or ketchup
Homemade chili sauce is classic. Whether your favourite recipe is on the sweet or savoury side, make a large amount, then can it and share it with your friends and family. You can also make a sauce to replace the ketchup you put on your hamburgers and hotdogs. Here’s how: bring to a boil some tomatoes mixed with a little bit of sugar and salt. Add a dash of olive oil while whipping the sauce with an egg beater. Then season it according to your taste with hot pepper flakes, or fresh herbs…all that is left is to mix it in the blender to make it smooth and then put it into a container to facilitate pouring. It should be stored in the refrigerator.
Take advantage of tomato season to prepare your favourite pasta sauces that you can preserve in jars for later. Whether you make your favourite spaghetti sauce recipe, or just a sauce base, they are sure to come in handy all year long. To whip up a quick sauce base, you merely boil the tomatoes with olive oil, garlic and basil; it’s that simple! You’ll end up with a delicious homemade mix that you can add to your pasta recipes!
That’s just a few good ideas, and we’re not even including all the great salsas, tomato chutneys, sun-dried tomatoes and whole tomatoes which you can freeze…just let your imagination go and you can reap the rewards of tomato season all year long!
