Select bright, green asparagus with closed, compact and firm tips. Look for cut ends that are not dry. Select asparagus stalks that are the same thickness so cooking will be uniform. The thickness of the stalk does not influence quality.
The bottom of an asparagus stalk is edible, but it can be tough and stringy, so snap off before cooking.
